That Cucumber Thing…

That Cucumber Thing Like The One You Get At The Chinese Restaurant On Guang Fu  Lu

INGREDIENTS:

  • 2-3 cucumbers (medium), de-seeded and diced or sliced (depending on how you want to eat them)
  • 1 tablespoon sugar
  • 3 tablespoons rice vinegar
  • 1 teaspoon soy sauce
  • 1/2 teaspoon crushed red pepper (la jiao is the name of the “true” Chinese peppers we used.)
  • 2 cloves garlic, minced
  • 1 bunch cilantro, chopped

DIRECTIONS:

  1. Heat and mix all ingredients (except cucumbers and cilantro) on the stovetop until sugar is melted (for about 5 minutes or until just boiling.)  Set aside and cool.
  2. When ready to serve, pour sauce over cucumbers and mix well.  Add cilantro and serve immediately. (Be careful not to add the sauce to early, or the cucumbers will absorb it all.  It’s best to transport the dressing separately from the cucumbers and add them right at the end…)
